I saw this Cous-Cous Paella at http://yumsugar.com and thought it’d be great to make for dinner one night because it seemed simple and nutritious, plus I love paella. Well, this turned out nothing like paella at all. It was still good, but it was more like cous-cous with a bunch of different things thrown in as well. I don’t know if I’d make it again, but it was still pretty good and took about 15 minutes to make. Recipe after the jump.

Cherry tomatoes are so good. I love to just eat them as a snack.

Cous-Cous Paella

1 can (14 1/2 ounces) chicken broth
1 package (10-ounce or 1 1/2 cups) couscous
1 package (10-ounce) fresh or frozen peas
2 teaspoons olive oil
1 green pepper, diced
12 ounces low-fat kielbasa, sliced (I used turkey kielbasa and didn’t tell Dane or Kramer, haha)
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon dried thyme leaves
1/4 teaspoon ground black pepper
1 1/2 cups cherry tomatoes, each cut in half
1. In a saucepan, heat chicken broth and 1/4 cup water to boiling over high heat.
2. Lower the heat to the lowest setting on your stove; stir in couscous and frozen peas. Cover saucepan and let stand 5 minutes or until ready to use.
3. Meanwhile, in nonstick 12-inch skillet, heat olive oil over medium-high heat until hot. Add green pepper and kielbasa and cook 5 minutes, stirring occasionally.
4. Add garlic, salt, thyme, and black pepper, and cook for about 5 minutes, stirring occasionally.
6. Fluff couscous with fork; add to kielbasa mixture in skillet, and toss gently until combined.
