I had an hour or so to kill yesterday, so I was rummaging through my cupboard trying to find something to bake. I found a box of spice cake mix and at first dismissed it because I didn’t feel like frosting a cake. And then I remembered that you can make cookies out of cake mix. These these turned out just like I thought they would: soft, chewy, and extremely cute! They took no time or effort at all, but don’t put them in the fridge like I did (it’s hot in AZ right now and I didn’t want the frosting to melt) because it dries them out! Either way, these were delicious and definitely worth whipping up. Recipe after the jump!

Your very few ingredients. Just combine those three things thoroughly.

Roll the dough into 1-inch balls and press them a little flatter onto the greased cookie sheet with the palm of your hand.

Bake for 8-10 minutes. Allow to cool on the cookie sheets.

Then move to some kind of workspace (for me this is always a sheet of tinfoil, haha).

Frost the flat side with the frosting of your choice (I used a simple buttercream).

And place another cookie, flat side down, on top of the first frosted cookie.

I rolled the sides of them in sprinkles, but you can use anything else or nothing at all!

These were so quick and simple!

Cake Cookie Sandwiches
Print this recipe
1 package cake mix of your choice
1 egg, room temperature
1/2 cup butter, room temperature
1. Preheat your oven to 350 degrees F. Grease your cookie sheet(s).
2. Beat all three ingredients together until just moistened.
3. Roll the dough into 1-inch balls, place on the greased cookie sheet, and press a bit flat with the palm of your hand.
4. Bake for 8-10 minutes, or until the cookies seem less shiny on their tops. Allow to cool on the cookie sheets.
Buttercream Frosting
3 cups powdered sugar
3/4 cup butter, softened
1 1/2 teaspoon vanilla extract
2-3 tablespoons milk
1. Cream sugar, butter and vanilla. Add the milk and beat until fluffy, adding more if needed.
2. Refrigerate, covered, for 30 minutes.
Assembly:
1. Frost the flat side of the cookie with a good dollop of frosting.
2. Lightly place the flat side of an unfrosted cookie on top.
3. Press down until a bit of the frosting begins to poke out of the sides.
4. If you want to decorate the edges, place your sprinkles/chips/etc. in a small bowl, and dip the sides of the cookie in it, rolling the cookie around to coat all sides.

I’m new to baking but this recipe looks delicious… I just wanted to clarify that you’re just using the box mix as your flour, you’re not adding all the normal box ingredients to it and then adding the egg and butter on top of that?
What do you think about adding carrot puree (baby food) to this batter to make a carrot cake cookie? Would the puree throw off the consistency too much? I want to make this today with some cream cheese frosting and roll it in pecans to take on a picnic we’re having tonight. I might just try it and let you know if I don’t hear from you!
I think it might make it a bit runny, but maybe if you just drop the cookie dough by spoonfuls instead of rolling it into balls, it’ll be just fine! I’m excited to hear how they turn out!
Ok, so I’ve finally finished the cookies!
I used only 1/2 a stick of butter (instead of the whole stick you used) and then added a 4oz jar of carrot baby food. The dough was a little too sticky to roll into balls with my hands (though it wasn’t runny at all), so I used a tablespoon. They came out much too big, but that’s my fault. I’m never very good at sizing out my cookies. I just topped them off with my homemade cream cheese icing (4oz cream cheese, 1/2 stick a butter, 1/2 tsp vanilla and 1 cup of confectioner’s sugar) and then sprinkled with toasted pecans. Since the cookies were so large, I decided against the sandwich cookies. They look great, but I can’t do that many calories in one bite!!
My taste test was very very satisfactory! Thanks for the idea!
Great recipe!!!! Drizzly grey day out, I needed to entertain my eight and five y ear old daughters so they made cookies all on their own. Didn’t know you could use cake mix for cookies. We made chocolate chip with vanilla mix and white chocolate chip with chocolate mix!
