I got this recipe from Cocoa and Cheese, but I revised it a bit, haha. The original recipe was for a tortellini soup, a broth-based soup with tortellini. My boyfriend (Kramer), however, isn’t very fond of broth-based soups, but I absolutely loved the idea! So I decided to reduce the soup enough for it to become a kind of a sauce. It was delicious! So this is my adaptation of the recipe – just keep simmering!
The end result was absolutely delicious. All of the components made for a great “stew”, and I’m sure, a great soup (I would love to make it for just myself as a soup). Go ahead and give this a try; it’s pretty easy and the end result is amazing! Recipe after the jump.

What you’ll need.

Break the sausage up from its casing and cook for around 5 minutes.

Chop up your green pepper.

And the onion.

Add the vegetables to your sausage and cook for a few minutes, until the sausage is done. Add the garlic and cook for a few more minutes.

Chop up your zucchini.

Add the wine, beef brother, water, tomatoes, celery, and tomato sauce.

Then add your oregano, basil, and zucchini.

Stir and allow to come to a boil.

Allow to boil for another 20 minutes, then add your tortellini and allow to simmer for another 30 minutes.

Tortellini Vegetable Stew

adapted from Cocoa and Cheese
1 pkg. hot Italian sausage
24 oz. frozen or fresh cheese tortellini
6 cups beef broth
1/2 cup water
1/2 cup red wine
1 14.5 oz. can stewed tomatoes
1 14.5 oz. can tomato sauce
1 medium yellow or white onion, roughly chopped
1 green pepper, chopped
1 zucchini, cubed
2 stalks celery, chopped
4 cloves garlic, chopped
1/2 tsp. oregano
3 tbsp. parsley
2 tbsp. basil
Freshly shredded parmesan or mozzarella cheese
1. In a large pot over medium-high heat, get the Italian sausage out of the skins and fry for about 5 minutes.
2. When there are some juices in the pan from sausage, add the onion and green pepper. When sausage is almost done, add garlic and cook for about 2 more minutes.
3. Drain the mixture and return to pan. Bring following ingredients to a boil with the sausage mixture: beef broth, water, wine, tomatoes, tomato sauce, basil, oregano, zucchini and celery.
4. Once at boiling, allow to boil for 20 more minutes. Add the tortellini and parsley.
5. Simmer covered for 30-35 more minutes. Serves 6-8.
