The entire time I was cooking it, I was a bit nervous about the bacon for some reason. I usually make the risotto and then add in the extras at the end. However, the bacon perfectly seasoned the whole dish and was just to delicious for words. Thanks for sharing this recipe! We loved loved loved it!
