In an effort to get out of the house and out of our comfort zone, Kramer and I went to a comedy show on a work night at UCBeast last night, which we rarely, if ever, do. Shocker! I’m a bit tired this morning, but it was worth it, at least. We saw Rich Sommer, Matt Walsh, Jim Parsons, and Anna Chlumsky do a show called Celebrity, which was a lot of fun and despite its late start time, I’d definitely go again. Tonight, we’re planning to head over to Nitehawk Theater to see Safety Not Guaranteed, which looks awesome and I’m really excited about, preceded by drinks somewhere in Williamsburg (I’m hoping The Ides, but every time we try to get in, there is a line and I refuse to wait in line for a $15 cocktail, even if the view is fantastic) and followed by the new episodes of Louie and Wilfred that aired last night. Tomorrow, I’m volunteering with Badass Brooklyn Animal Rescue, which I think will be both good therapy for me after Tessa’s passing and a way for me to finally get involved in helping out in some way – would you believe how hard it is to get a volunteer position with most animal shelters? I guess I really only have real time to do stuff like this on the weekends, whereas most shelters probably need help during the week. Either way, I will be out with all of BBAR’s adoptable and foster-able dogs, so if you’re looking for a four legged friend, I can let you know where we’ll be!
I saw these baby pineapples and I just. had. to. get. them. I mean…they are so tiny and cute and just begging to be made into cups from which to sip a cool summer cocktail, aren’t they? I had to use an oven mitt to hold the pineapples while I scooped the fruit out from the inside, because despite their adorable appearance, they were really sharp on the outside! After that, though, it was smooth sailing: add a peach, a banana, some tequila, and St. Germain, and boom! You’ve got yourself a tropical treat that you won’t be able to get enough of. Kramer and I enjoyed these in our apartment over the weekend, so even though it was hot outside, we made the best of it and got into the summer groove. I had to add a little umbrella because, come on, I’m drinking out of a pineapple already, you’ve gotta do this whole thing the right way. I highly recommend picking up some tiny umbrellas for yourself, too. It somehow makes this cocktail even more delicious. Have a great weekend, everyone!
- 2-4 baby pineapples (or 1 regular pineapple), fruit removed and pineapples left in tact (if you want to use them to drink out of, that is)
- 1 peach or nectarine, diced
- 1 banana
- 6 ounces tequila
- 2 ounces St. Germain
- If you want to use baby pineapples as cups, cut the tops off of them, scoop out the fruit, and keep the pineapples in tact. If you just have a regular pineapple, cut it up and use about 1 cup diced pineapple. Place the fruit in your blender, along with your diced peach or nectarine and banana. Pour in your tequila and St. Germain and top with ice. Turn the blender on, pulsing until pureed and smooth. Taste, and add more St. Germain if you want it to be sweeter. Pour back into the pineapples or into tall glasses and serve.
